Broccoli Casserole

This is so, so simple! A family I was working for while living in Louisville gave this recipe to me and it it AMAZING EVERY TIME!!!! I was in a time crunch to make this so I didn't get good, detailed pics :(

1 large head of broccoli: stems removed
1 can cream of chicken or mushroom soup
1 cup of mayo (I am going to substitute greek plain yogurt next time)
1/2 cup butter: softened (for cracker topping)
2 large eggs; beaten
1 small onion: diced
1 tsp salt
1 tsp black pepper
1 1/2 cups shredded sharp cheese
2 cups finely crushed Ritz crackers

Preheat oven 350
Steam and drain broccoli
Blend all ingredients except crackers. (only 1/2 cup of the cheese). Put mixture in pan; set aside.
In another bowl melt butter and add crushed crackers. Gentle blend well. Add toping to broccoli mixture.
Bake 30 minutes.
Remove, add left over cheese and bake until cheese is melted.
Set aside 20 minutes before serving. This is important for the texture to be right.
